Spinach Peach Frittata
(KUTV) Chef Joe Russo makes a Spinach Peach Frittata that’s perfect to serve on Christmas morning.
Ingredients:
1 clove minced garlic
1 small onion, very thinly sliced
1 Tbs. olive oil
6 oz. fresh spinach, cooked (about 3/4 c.), drained and chopped
1/2 tsp. salt
1/4 tsp. freshly ground pepper
1/8 tsp. ground nutmeg (optional)
2 large fresh California peaches, pitted and sliced
6 eggs
2 Tbsp. water
1 Tbsp. finely minced fresh basil leaves
1/4 c. (2 oz.) shredded Muenster cheese
Substitution;
1 (10 oz.) pkg. of frozen spinach, thawed, squeezed dry and chopped may be substituted for fresh spinach.
