Valentine's Day Hand Rolled Truffles
1c Heavy Cream
12oz Semi-Sweet Chocolate
1c Almonds, chopped
1T Amaretto (optional)
2lbs Semi-Sweet Chocolate
In a medium saucepan, bring heavy cream to a simmer.
Remove from heat.
Stir in chocolate and butter until smooth. Allow to cool.
When ganache is lukewarm (approx. 75F), stir in almonds and amaretto until combined.
Pour the ganache into a shallow baking dish and allow to cool completely in the refrigerator, until it is firm.
Using a spoon, or a small scoop, portion the ganache into desired size.
With hands lightly coated in powdered sugar, roll ganache into balls. Be sure to be quick and gentle.
Allow truffles to set up in the refrigerator or freezer until hard.
Melt 2lbs of semi-sweet chocolate in a large bowl.
Using your fingers, forks, or a dipping fork, dip the truffles into the melted chocolate, being sure to coat the entire truffle.
Place truffle on a sheet pan lined with parchment paper.Allow to dry.
Present in paper cups or on a plate.
