Garlic Shrimp & Broccoli Penne
-3/4 cup (2 ounces) uncooked whole grain penne
-1 cup chopped broccoli florets
-2 cloves garlic, minced
-1/4 teaspoon red pepper flakes
-1 teaspoon olive oil
-12 medium precooked frozen shrimp, thawed
-1 tomato, chopped
-1 Tablespoon Parmesan cheese
Cook pasta according to package directions. Sauté broccoli, garlic, red pepper
flakes and oil for 5 minutes. Add shrimp and tomatoes and cook for additional 5
minutes. Toss broccoli mixture and cooked pasta. Top with Parmesan cheese.
