We are getting Super Bowl ready with Chef Kimberly from Harmons. Chorizo Queso
Ingredients: 1 lb. Harmons chorizo sausage1 white onion, finely diced2 red peppers. seeded & diced1 poblano pepper, seeded and diced2 jalapenos, seeded and diced2 tablespoons flour1 cup half and half12 oz. cotija cheese12 oz. queso fresco cheese 2 tablespoons paprika2 tablespoons cumin 1 tablespoon chili powder, optional4 tomatoes, diced1 bunch cilantro, chopped Tortilla chips for serving
Directions: 1. Preheat oven to 400 degrees.2. In a large sauté pan, on medium high heat, cook and crumble chorizo until brown. 3. Remove from skillet and drain on a paper towel. 4. Return pan to heat. 5. Add onions, red, poblano and jalapeno peppers bell peppers to the skillet and cook over medium-high heat until soft and slightly browned, about 5-6 minutes. 6. Add garlic, paprika, cumin, chilies powder, and cook for 2 more minutes. 7. Add chorizo back into skillet.8. Sprinkle flour over the top of chorizo and vegetables. 9. Stir in, then add half and half stirring continuously. 10. Bring to a light boil. 11. Reduce heat. 12. Crumbled queso fresco slowly allowing to melt completely. 13. Fold in diced tomato. 14. Cover queso with crumbled cotija cheese.15. Place into the oven and bake for 5-10 minutes. Bake it until the cheese is lightly golden on top and slightly bubbling.16. Remove from the oven, sprinkle with cilantro, and serve immediately with tortilla chips.
