Challah Bread, sliced ½ to ¾ -inch thick
Kalamata Herb Aioili: kalamata olives, basil, mint, chives, lemon zest and mayonnaise, combined
Raclette or Swiss Cheese
Rotisserie Chicken, cut or pulled into strips
Prosciutto Parma thinly sliced
Roasted Yellow Pepper
Spinach and Arugula Blend
1.) Heat Panini Grill or Press to med- high heat. Spread all sides of Bread with Aioli, then begin to build sandwich in order of cheese, meat, fillings, meat, cheese, bread.
2.) Place on grill and cook until cheese and fillings are heated. Crust should be a dark golden brown.
5 Important components for Panini:
Spread/aioli- Flavored mayonnaise
Suggestions for each:
Bread- Challah, Foccaccia, Ciabatta. Buy as a full Loaf you can slice into proper thickness.
Spread/Aioli- mayonnaise with flavorings. Choose ingredients that will incorporate into mayonnaise and not burn when grilled. Fresh Herbs, Garlic and shallots, olives and Capers, For spicy addition use jalapeno or chipotle paste, Dried Fruits,Citrus juice and zest
Cheese- Visit cheese wheel at grocery store and try different cheeses. Ask for samples and information about the cheese. Caputos/ Harmon's, whole foods have qualified staff that can be very helpful
Meats- Chicken (rotisserie, grilled,shredded) , Roasted Turkey, Pulled Pork, Steak Strips, Deli meats, Prosciutto, Motradella.
Fillings- caramelized onions, roasted peppers,tomatoes (fresh, sun dried, marinated) pepper dos, grilled squash, zucchini, eggplant, roasted beets, spinach, apples, pears. Use local farmers market to get fresh fruits and vegetables.
Be creative and try new things. It is just a fancy sandwich, after all!
