½ lbs Ricotta
½ lbs. Cream cheese, softened
½ lbs Feta cheese
1 Bunch of fresh mint, finely chopped
1 lbs Phyllo dough
1 lbs. Melted butter
1.) Wash feta under cold water to remove salt. Combine ricotta, feta, cream cheese, and egg in a bowl. Whip until soft and creamy.
2.) Fold in chopped mint until incorporated
3.) Open one package of phyllo and cut into thirds, lay 2 sheets down at a time and brush with melted butter and add a Tbsp of mixture at the end of each strip.
4.) Fold the strip from corner to corner so you can make little triangles, and brush the top with melted butter.
5.) Place on a greased baking sheet and bake at 375 degrees for 20 min. or until golden brown.
