1 cup cake flour
1 cup all purpose flour 1 tbsp baking powder 1/2 teaspoon salt 4 large eggs, separated ¼ cup sugar 2 teaspoon vanilla extract ½ stick melted butter 2 cups milk (more or less) non-stick cooking spray
Syrup of choice
1.) Preheat the waffle iron according to the manufacturer's instructions.
2.) In a medium bowl combine all of your dry ingredients and whisk together.
3.) In a separate bowl add your egg yolks, sugar, vanilla, melted butter, and milk. Whisk together.
4.) Whip your egg whites to medium peaks.
5.) Add your dry ingredients to your wet ingredients and stir to combine.
6.) Gently fold in your egg whites.
7.) Waffle mix is ready to go.
8.) Follow manufactures instructions for cooking waffles.
9.) Top waffle with freshly cut fruit, whipped cream, powdered sugar and syrup if desired.
