Tomato Jam And Caramelized Onions

2 LB Roma Tomatoes cored and seeded
½ C Sugar
3T Apple Cider Vinegar
¼ t Smoked Paprika
¼ t Hungarian Paprika
Salt and Pepper to taste
1.) Chop tomatoes and toss with sugar in sauce pan. Let sit for 10 minutes. Bring to a boil over medium heat and cook for 10 minutes.
2.) Add cider vinegar and both paprika. Lower heat and simmer for 10-15 minutes, or until mixture becomes jammy and thick.
3.) Finish with salt, pepper and squeeze of lemon.
2 LG Onions, thinly sliced
4 T Extra Virgin Olive Oil
¼ C Light Brown Sugar
1.) Sauté onions in olive oil over medium heat until soft, being careful not to let them brown, about 10 minutes.
2.) Turn heat to low and cover and let onions sweat, stirring several times, until lightly browned and very soft. About 20-30 minutes.
3.) Add brown sugar and toss onions thoroughly to coat. Season with salt and pepper. For a richer taste, finish with 1T of butter.
