Pistachio Roquefort Grape Truffles

¼ lbs Cream Cheese, softened
6 oz Roquefort Cheese, softened
3 T Merlot (optional)
2 lbs Seedless Red or Green Grapes
2 C Pistachios, toasted &finely ground
1.)Toast pistachios on a rimmed baking sheet in a 350 degree oven for 8-10 minutes or until lightly toasted and fragrant. Cool.
2.) Grind pistachios in food processor.
3.) Transfer to parchment lined baking sheet and set aside.
4.) Cream softened Roquefort cheese and cream cheese in the bowl of an electric mixer until well combined. Add Merlot (if using) and combine well.
5.) Using moistened hands, carefully pinch of a section of the cheese mixture.
6.) Insert grape into center of cheese. Roll until the grape is completely covered in the cheese mixture.
7.) Drop cheese covered grape onto ground pistachios and roll to cover completely.
8.) Repeat until all grapes and cheese are used. Refrigerate until ready to serve.
