Roasted Garlic Nuts

1/2 cup walnuts
1/2 cup pecans
1/2 cup cashews
2/3 cup garlic cloves
2/3 cup shallots, sliced thin
1 tablespoon lemon zest
2 sprigs rosemary
2 teaspoons smoked sea salt
Chili olive oil
1.) Preheat an oven to 400 degrees. Place the nuts on a sheet pan and roast in the oven for 15 minutes or until some color is established.
2.) In a small pot, add the garlic cloves. Add the chili olive oil to the pot till it barely covers the garlic.
3.) Turn the burner on medium and roast the garlic till golden brown and tender.
4.) Strain the garlic out of the oil and add the sliced shallots to the same reheated oil. Cook the shallots till they become firm.
5.) Strain the shallot out of oil and cool to room temp. With the same oil in the pot add the fresh rosemary and turn off the heat. Let the oil cool to room temperature.
6.) In a large bowl, add the roasted nuts, garlic, shallots, and lemon zest. Toss lightly to combine.
7.) Add about a tablespoon of the flavored oil to the nut mixture with the smoked salt. Toss again to combine the ingredients and serve.
