Blackberry Lemonade Cupcakes

Lemon Cupcakes Ingredients:
1 box white or lemon cake mix
4 egg whites
1/3 C. Oil
3/4 C. milk
1/3 C. plain yogurt
1/4 C. lemon juice
2 T. lemon zest
Blackberry Buttercream Ingredients:
1 C. butter, softened
2 T. blackberry puree, strained
3-4 C. powdered sugar
Fresh blackberries for garnish
1.) Preheat oven to 350 and line pan with cupcake liners
2.) Sift cake mix into a small bowl; set aside
3.) In a large bowl, combine egg whites, oil, milk, lemon juice, and lemon zest until smooth.
4.) Add cake mix; stir to combine well.
5.) Fill cupcake liners 3/4 full and bake for 17-22 minutes or until inserted knife comes out clean.
6.) For blackberry buttercream: beat butter for 2 minute. Scrape down the sides of the bowl, add blackberry puree, and beat again. Gradually add powdered sugar until the buttercream reaches the desired consistancy.
7.) Pipe buttercream on top of the cupcakes once the ganache is firm to the touch. Top with a fresh blackberry.
*To make blackberry puree, place blackberries in a blender or food processor and blend until liquid. Put the puree through a strainer to remove all seeds.
