Steak Sandwich with Mushrooms, Onions and Blue Cheese Mayo

1-2 New York Steaks
1 lb. cremini, button and portobello mushrooms
1 tsp. minced garlic
2 tbs. olive oil
1 tbs. butter
½ white onion (sliced)
¼ C. dry sherry
½ C. blue cheese crumbles
2 hoagie rolls
½ C. mayonnaise
2 tbs. fresh parsley chopped
Salt and Pepper
1.) Preheat oven to broil
2.) Place the New York steaks on add plate salt and pepper both sides.
3.) Allow steaks rest while you prepare the mayo and mushrooms.
4.) Warm sauté pan to medium or high heat.
5.) Place the olive oil and butter into the hot pan allowing the butter to melt.
6.) Add garlic and white onions, allowing them cook for about 3 to 4 minutes.
7.) Add the mushroom mix the pan and sauté for another 2 to 3 min or until everything has caramelized or turns light brown around the edges.
8.) Once mix has caramelized, deglaze the pan with the dry sherry (Note - sherry may flame when placed in the pan).
9.) Empty contents of pan into a bowl, cover with clear wrap and set aside.
10.) In a small bowl add mayonnaise, 1 tbs. blue cheese crumbles and 1 tbs. parsley.
11.) Lightly mix with a spoon, trying not to break apart the blue cheese.
12.) Set mixture aside.
13.) Reheat sauté pan over medium to high heat and place the New York Steaks into the pan, allowing them to cook for about 3 to 4 minutes without flipping.
14.) Flip steaks and cook for another 3 to 4 minutes (for a total of 6 to 8 minutes).
15.) Place the steaks aside and allow them to rest for 6 minutes to maintain juices when the steak is sliced.
16.) Prepare your hoagie rolls by cutting along the length of the roll about ¾ of the way through.
17.) Place 1 tbs. of the mayo mix on the bottom half of the roll and set aside.
18.) Slice your New York steak on a cutting board (about ½ inch thick slices). (Note - meat will be quit raw and red in color).
19.) Place the steak on the bottom half of the roll.
20.) Top the steak with the mushroom and onion mix.
21.) Top the steak with the remaining blue cheese crumbles and place onto a sheet pan and into the oven set on broil.
22.) Broil the sandwiches for about 4 to 5 minutes. This will toast the roll, caramelize the cheese and cook the meat to about medium.
23.) Remove form the oven and garnish with the remaining parsley
24.) Enjoy your hard work!
Pat's Green Salad
1 bag spring mix greens
1 C. mandarin oranges drained
4 tbs. walnuts
12 cherry tomatoes cut in half
2 avocados sliced
½ C. olive oil
¼ C. red wine vinegar
¼ tsp. fresh thyme
½ tsp. sugar
1tsp. Dijon mustard
Salt and pepper
1.) In a blender or hand blender cup add the red wine vinegar, sugar, Dijon mustard, fresh thyme and salt and pepper to taste.
2.) Blend on low, slowly adding the olive oil to make an emulsion for about 2 to 3 minutes then salt and pepper to taste.
3.) In a large bowl add spring mix and half of the ingredients reserving the other half for garnish to finish the salad once it is plated.
4.) Add the dressing to the spring mix and toss evenly coting the greens, nuts, oranges, avocados and cherry tomato.
5.) Place about 1 C. of the salad mix onto your serving plate and garnish with some of the remaining items.
