Stan Bakes Roast

3 to 4 pound top sirloin roast
1 (12oz.) can beer
2 (8oz.) cans tomato sauce
½ cup brown sugar
½ cup lemon juice
½ cup molasses
½ cup red wine
½ cup soy sauce
2 tbsp. Worcestershire sauce
2 tbsp. mince garlic
1 bay leaf
½ tsp. caraway seed
½ tsp. dry mustard
½ tsp. Tabasco sauce
3 cup sliced white mushrooms
2 tbsp. flour
2 tbsp. butter
Salt and pepper to taste
1.) Combine all ingredients except white mushrooms, flour, butter and sirloin roast in a large mixing bowl.
2.) Place the roast into a large zipper storage bag add the marinade.
3.) Seal the bag and rub the marinade all over the sirloin, spreading evenly to coat the meat.
4.) Refrigerate overnight.
5.) Pre-heat the BBQ grill to high and oven to warm.
6.) Remove the roast from the bag and drain the sauce from the bag into a large saucepan and set aside.
7.) Lower the temperature on the grill to medium-high.
8.) Place the meat on the grill and cook for 10 to 15 minutes each side.
9.) Remove the meat from the grill and place into a casserole dish.
10.) Cover with foil and place into the oven until ready to serve.
11.) Bring the marinade in saucepan to a boil.
12.) In a large sauté pan melt the butter and add the white mushrooms.
13.) Sauté for 3-4 minutes.
14.) Add the flour to the mushroom mix and continue cooking for 2-3 min or until the flour is light tan in color.
15.) Pour the marinade into a large sauté pan to deglaze the pan, allow the sauce to come to a boil and reduce to the desired thickness.
16.) Remove the roast from the oven and place on a cutting board.
17.) Allow the meat to rest 6-8 min before cutting.
18.) Slice the meat across the grain, place on serving plate and pour the white mushroom sauce over the roast and serve.
Note - The roast can also be cook to finish on your grill. If you choose to, grill the roast on medium-high, 10-15 min each side. Lower the grill temp to low and place on upper rack of the grill and begin working on your sauce.
