Summer Fruit Popsicles

Pina Colada (virgin) with Tropical Fruit and Sweet Pepper Watermelon Mint
20 Pop Batches
Pina Colada Liquid Component:
1 ½ cups coconut milk
½ cup plain yogurt
¼ cup brown sugar
½ cup pineapple juice
2 tbs. agave
Plus 1/8 cup mix for each pop:
Chopped pineapple (fresh), banana(fresh), strawberry(fresh) and toasted coconut
Watermelon Pepper Liquid Component:
2 cups puree of seedless watermelon
½ cup puree of roasted sweet red bell pepper
½ tbsp. vanilla
½ cup honey
¼ tsp. ground ginger
Plus 1 tbsp mix for each pop:
Finely chopped dried Utah cherries and pinch of fresh finely chiffonade mint
1.) Place half of chopped fruit in Popsicle mold, pour in liquid, and add other half of fruit (fill to 2/3 full). Freeze partially (enough so watermelon liquid won't mix when poured in).
2.) Mix cherries and mint into watermelon liquid, add to Popsicle mold until full.
3.) Place Popsicle stick and lid on, leave enough of stick out to hold.
4.) Freeze overnight.
5.) Remove by placing mold in hot water bath approx. 10-20 seconds until they come out of mold.
