Chewy No-Bake Granola Bars

1 ½ C creamy or crunchy peanut butter
1 C honey
½ C maple syrup
1 C steel cut oats
3 C puffed rice cereal
2 C puffed wheat cereal
½ C almonds, chopped
½ C dried apricots, chopped
½ C dried blueberries, cranberries or raisins
¼ C pumpkin seeds
2 T flax seeds
2 t sea salt, divided
1.) Prepare sheet pan: Spray a 11 x 13" rectangular sheet pan with pan spray. Carefully line sheet pan with plastic film. This will allow you to remove the bars easily from the pan once they are refrigerated. Set aside.
2.) Melt peanut butter, honey and maple syrup in a saucepan over medium heat until completely melted. Alternatively, you may also melt ingredients in a microwave safe bowl in the microwave on medium power. Set aside.
3.) In a large mixing bowl, combine the oats, puffed rice & wheat cereal, nuts, seeds, dried fruits and 2 t salt. Mix gently. Add the melted peanut butter mixture and mix gently but thoroughly.
4.) Spread the mixture evenly into the prepared sheet pan, pressing down slightly. Sprinkle with remaining 1 t sea salt. Cover bars with plastic film and refrigerate 2 hours.
5.) Once set, remove plastic film and turn out onto a cutting board. Remove lower plastic film & cut bars into squares. Bars may be individually wrapped and kept in the refrigerator for up to a week…if they last that long!
