Easy Southwest Chicken

5 Boneless Skinless Chicken Breasts
1 can Cream of Chicken Soup
1 jar Salsa
Mix soup and salsa together. Pour over chicken breasts in greased slow cooker. Cook on low heat 6-8 hours. Serve over hot rice and sprinkle with shredded cheddar cheese if desired.
Cilantro Lime Rice
1 1/2 cups long grain rice
1 lime zest
1/2 cup of chopped fresh cilantro
1 teaspoon salt (to taste)
- Rinse dried rice to remove extra starch. Strain well.
- Bring 3 cups water to a boil in medium sauce pan. Add rice, reduce heat and cook for about 20 minutes. Remove pot from hot steam and cover with lid. Let stand about three minutes. Strain any additional water.
- Gently fold in lime zest, juice from lime, cilantro and salt.
