Bison New York Steak with Sauteed Peaches

1 bison filet, strip loin or rib eye 8 -12oz
2 ripe peaches halted and pit removed then sliced
1 small yellow onion diced
3 cloves garlic minced
1 small shallot minced
1 cup chicken or beef stock
1 T olive oil
1.) Heat olive oil until smoking. Salt and pepper bison.
2.) Sear bison on med high heat and finish to desired temp in oven. Once bison is to temp let rest for at least 10 min.
3.) Use same oven safe pan to sautéed sliced peaches and onions. Once onions and peaches have colors add garlic and shallots. Deglaze pan with chicken or beef stock reduce for 5 min to thicken.
