Yams and Apples

0.25 cup Butter
3 tablespoons Flour, heaping
6 small Granny Smith Apples
3 tablespoons Lemon Juice
1 cup Sugar
6 medium Sweet Potatoes
2 cups Water
1.) Peel and cut sweet potatoes into one inch chunks. Thinly slice apples.
2.) Spray 9x13 casserole with non-stick spray. Alternate layers of sweet potatoes and apples. Preheat oven to 350. In a sauce pan, heat butter, flour, sugar, and water over low heat until dissolved.
3.) Pour sauce over sweet potatoes and apples and bake 1 hour 20 minutes, or until sweet potatoes are tender. If sauce is too runny, add a little more flour.
4.) Sprinkle lemon juice over top after removing from oven.
