Peppermint Crunch Cupcakes

1 can cream cheese frosting
1 package mint oreos
1/2 cup peppermint candy canes
1 box red velvet cake mix
1/3 cup Vegetable Oil
1/2 cup Water
12 ounces white chocolate morsels
1. Prepare Peppermint Crunch Topping as follows: Heat white chocolate morsels in a microwave-safe bowl on high for 30-seconds. Stir then repeat until melted (about 1 1/2 minutes total). Stir until smooth, and spread in a 1/4-inch-thick layer on a foil-lined baking sheet. Sprinkle evenly with peppermint candy. Chill 30 minutes or until firm. Remove from baking sheet, and chop.
2. Meanwhile prepare cupcakes as follows: Line cupcake tin with paper or foil cups. Place a mint oreo in the bottom of each cup. Prepare red velvet cake mix according to box directions and fill each cup until 2/3 full. Bake about 18 minutes or until toothpick inserted in center comes out clean. Let cool completely.
3. When cupcakes are cool frost with cream cheese frosting. Sprinkle chopped peppermint candy mixture evenly over cupcakes.
