Note: Requires use of pizzelle iron
3 large eggs
2 teaspoons vanilla extract
1 stick ( cup) butter, melted and cooled
teaspoon anise seed (optional)
1 cup all-purpose flour
2 teaspoons baking powder
cup powdered sugar (for dusting)
1. Melt butter and set aside. Beat eggs and sugar until light yellow, 2-3 minutes. Add melted butter and vanilla. Beat until blended. Sift together flower and baking powder. Add to wet mixture and mix just until incorporated.
2. Heat pizzelle iron, and place 1 tablespoon of batter on grid just behind the center of the pattern. Bake until golden brown (about 30-40 seconds). Remove and cool on a rack. Repeat with remaining batter. When cookies are cool, dust with powdered sugar.
