Traditional Pork Posole

1 lb pork Shoulder cut into small cubes
3 Roma tomatoes, diced
2 T cilantro, chopped
1 whole onion, peeled and coarsely chopped
5 cloves of garlic, peeled and diced
1/4 teaspoon pepper
1 teaspoon ground cumin
1/2 teaspoon oregano
1/4 teaspoon ground cloves
4 green chiles, roasted, peeled and diced
1 jalapeno, seeded, and finely diced
2 tablespoons oil
1 can Hominy drained and rinsed
Kosher salt to taste
1 gal. water or chicken stock
1.) In a large pot heat oil, when hot add pork, onion, garlic and salt and brown over medium heat.
2.) After approx. 7 minutes add water or stock, herbs, jalapenos and black pepper and simmer for approx 30 min.
3.) After 30 min add hominy, tomatoes and green chiles and cook for 10 min. Finish with cilantro and serve with lime wedges and warm tortillas.
