1/2 lb. Mexican white shrimp, cleaned and cut into small pieces
C radish, shredded
2 T Red Onion, minced
C Jicama, diced
C Red Bell pepper, finely julienned
2 Serrano peppers, cut into fine rings
3 T Cilantro, julienned
C Fresh lime juice
Kosher salt and black pepper, to taste
1.Place Shrimp along with the remaining ingredients in a large non-reactive mixing bowl and mix well to combine.
2.Allow mixture to marinate for at least 45 minutes to allow the lime juice to "cook" the shrimp. The Shrimp will look opaque when it is ready.
3.Drain some of the liquid to halt the cooking process and add salt if needed.
4.Serve with fresh Tostada rounds or tortilla chips and avocado.
5.Fresh white fish may be added or substituted if desired.
