Chocolate Banana Whole Wheat Crepe

Whole Wheat Crepe Mix:
2 cups whole wheat flour
3 Tbsp sugar
¾ tsp salt
3 tbsp Earth balance spread
2 tbsp brown sugar
4 bananas, sliced
1 cup dark chocolate chips
1. In mixing bowl, sift all crepe dry ingredients and whisk with soy milk very well.
Let mix settle for 30 minutes to allow for the whole wheat flour to thicken in mixture.
2. In Sautee Pan: Place the Earthbalance spread in your pan, the brown sugar, the bananas sliced. Cook this mixture down till the bananas become soft but still retain a bit of firmness.
3. Make crepe in a seasoned pan and stuff each crepe with an even portion of chocolate chips and the sauteed bananas. Garnish with ice cream or vanilla cashew cream.
