Recipe Courtesy of Creminelli Meats Salad Ingredients
12-16 paper thin slices of Creminelli Bresaola
16 ounces Arugula
1-2 ounces Pecorino Romano Cheese
4 ounces Candied Pecans (see recipe below)
2 Grilled Red Pears (see recipe below)
Grilled Red Pear Vinaigrette (see recipe below)Directions:
1.) Toss arugula with vinaigrette and coat evenly.
2.) Plate for serving by layering 2 slices of grilled red pear on plate. Place small handful of arugula on top of pears.
3.) Garnish with Bresaola, Pecorino shavings, and candied pecans. For added flavor, zest lemon over finished salad.Candied Pecans:
For best results use whole pecans. These will store for 1-2 weeks in an airtight container.
1.) Boil pecans in heavily salted water, this helps to draw moisture out of the pecans (hint: don’t add the salt until the water has come to a rolling boil, otherwise it will take much longer for the water to boil).
2.) Strain pecans and immediately coat heavily with powdered sugar.
3.) Heat Canola oil to frying temperature. Test temperature by dropping one pecan into pan, it should bubble and sizzle. Add sugared pecans and deep fry until brown and sugar has caramelized, 10-12 minutes. Grilled Red Pears:
Buy pears that are ripe but still firm. Hold pear in the palm of your hand and give a light squeeze to determine firmness. There should be a slight give but still firm fruit, so that the fruit will hold up during grilling.
1.) Heat grill on high and oil lightly
2.) Evenly slice pears, a mandolin works great for this. Reserve core for vinaigrette.
3.) Sprinkle pear slices with sugar. Sanding or raw sugar is preferred.
4.) Grill on both sides until sugar is caramelized. Do not overcook or pears will become mushy.
5.) Immediately place in fridge to cool pear slices down quickly.
6.) If desired, drizzle lightly with white balsamic vinegar.Grilled Red Pear Vinaigrette:
2 tbsp Honey Wine Vinegar
1 tbsp White Balsamic Vinegar
1 tbsp Lemon Juice
1-2 tsp Whole Grain Mustard
2 slices, Grilled Red Pear
Salt & Pepper to taste
¼-1/2 cup Olive Oil
2 tbsp Walnut Oil
1.) Combined all ingredients except for oils.
2.) Blend until all ingredients are combined and pears are pureed.
3.) Slowly drizzle oil in mixture while still blending.
4.) Adjust flavor with salt, pepper and lemon juice to achieve desired acidity.
