Roasted Pork Loin With Plum Glaze

2 pork tenderloin (not the whole loin)
2 tbsp freshly grated ginger
1 tbsp orange zest
1 tbsp brown sugar
1 tbsp freshly chopped thyme
1 tbsp freshly cracked pepper
1 tbsp kosher salt
1.) Place pork tenderloins on a prepared baking sheet and set aside.
2.) In a small mixing bowl, combine ginger, orange zest, brown sugar, thyme, pepper, and salt. Mix together.
3.) Rub spice mix onto the pork tenderloins and allow them to marinate for about 20 minutes.
4.) While the tenderloins are marinating, preheat oven to 400 degrees.
5.) Place pork tenderloins into the oven and cook for approximately 25 minutes.
6.) During the last 10 minutes of cooking, brush pork with plum glaze. (recipe below)
7.) Remove pork from the oven and let it rest for ten minutes before serving. Enjoy!
1/2 cup plum jam
1 tbsp rice vinegar
1/4 cup soy sauce
1/4 cup honey
1 tbsp dijon mustard
1/4 cup brown sugar
1.) Place all ingredients into a sauce pan and bring to a boil.
2.) Remove from heat and use as directed above.
