1 cup slivered almonds
1/3 cup honey
1 tsp chili powder
4 mangoes, peeled and thinly julienned
1 red bell pepper, thinly julienned
4 tbsp fresh lime juice
1/2 cup thinly sliced basil
Salt to taste
1. Mix the almonds, honey and chili powder in a small bowl. Spread onto a baking sheet that has been sprayed with vegetable oil. Place in a 450 degree oven for 20 minutes or until caramelized.
2. Add the julienned mangoes, red peppers, lime juice, and basil to a small bowl and toss.
3. Remove the nuts from the oven and let them cool. Break into pieces and serve with the mango salad.
4. If you would like, serve with a grilled chicken breast. Enjoy!
