Fish Sandwich With Homemade Tartar Sauce

1 1/2 pounds fresh cod (4-6oz fillets)
2 tsp season all salt
2 tsp black pepper
2 eggs, beaten
2 cups panko bread crumbs
2 tbsp extra virgin olive oil (more or less)
4 large rolls
1.) In a small bowl, mix together season salt and black pepper.
2.) Rinse and pat the fish fillets dry. Sprinkle with seasoning mixture.
3.) Dip the fish fillets in the egg and dredge in panko bread crumbs.
4.) Heat a large sauté pan or skillet. Add just enough oil to lightly coat the pan. Pan sear the cod fillets for about 4 minutes on each side. Fillets will all cook differently so adjust time as needed.
5.) Remove fillets and serve on a fresh roll with lettuce, tomato, and fresh dill sauce. Enjoy!
1 cup mayonnaise
1/4 cup sweet pickle relish
2 tbsp finely chopped dill pickle
2 tbsp finely chopped onion
1 garlic clove, minced
2 tbsp finely chopped dill
fresh lemon juice to taste (about 1-2 tbps)
1.) Mix all ingredients together. Cover and refrigerate until needed.
