Ethiopian Flat Bread With Spicy Chicken

3 cups flour
1 tbsp baking powder
1/2 cup whole wheat flour
1/2 cup corn meal
1 tbsp yeast
3 1/2 cups warm water
1.) Combine all of the ingredients together in a large bowl. Cover the bowl and allow it to sit for about 1 hour.
2.) When ready to make the flatbread, simply put to cups of the dough into a blender. Add 1/2 cup water to the blender and blend. Dough with be pretty thing.
3.) Heat a large non stick skillet on the stove and pour between 1/3 and 1/2 cup of batter into the pan. Quickly swirl the batter to coat the bottom of the pan (like you would do if your making crepes.
4.) Do not turn the flatbread over. You can tell when the flatbread is fully cooked when the wet look of the dough completely disappears and it picks up as one whole piece.
5.) Lay the freshly made flatbread on a clean dish towel for a couple of minutes, than stack on a plate and cover to keep warm.
3 chicken breasts cut into bite size pieces
juice of one lemon
1 large onion, chopped
2 garlic cloves, minced
1 tbsp butter
1 tbsp freshly minced ginger
1/2 tsp nutmeg
1/4 tsp ground cardamom
1/2 cup red wine
2 cups chicken stock
1 small can tomato paste (about 6-7 ounces)
salt and pepper
1.) Place chicken in a large bowl and pour the lemon juice and a little salt over the it. Cover and refrigerate for about 30 minutes.
2.) Heat a large pot over the flame and add just enough olive oil to lightly coat the bottom of the pan. Add the onion and garlic, saute until very fragrant.
3.) Add 2 tsp Berbere spice blend (recipe below) along with the butter, ginger, nutmeg and cardamom. Saute until fragrant (about 1 minute)
4.) Add the wine, chicken stock and tomato paste. Stir to combine and than add the marinated chicken. Bring everything to a boil, cover and reduce heat to a simmer and continue cooking for about 1 hour.
5.) Serve over rice or Klondike potatoes and enjoy with flatbread!
Berbere Spice Blend
2 tbsp ground red pepper
1 tbsp ground black pepper
1 tsp ground ginger
1 tsp cinnamon
1/4 tsp cloves
1.) Combine everything into a small bowl and mix together.
