Pork Chops With Curried Caramelized Onions

4 – 1 inch pork chops
2 tbsp apricot jam
1 large sweet onion
1 tsp curry powder
Salt and freshly cracked pepper
Extra virgin olive oil
1.) Cut onion in half, peel and cut into thin slices.
2.) Heat a sauté pan and add just enough olive oil to lightly coat the bottom of the pan.
3.) Place onion into hot sauté pan and sprinkle with curry powder. Cook until onions are well caramelized.
4.) Once caramelized, add apricot jam and stir to coat onions, set onions aside.
5.) If needed, add enough olive oil to sauté pan to lightly coat the bottom of the pan.
6.) Salt and pepper the pork chops and place into sauté pan, sear both sides and place the sauté pan into the oven and finish cooking the pork chops for about 10 minutes. (MAKE SURE PAN IS OVEN SAFE FIRST!!!)
7.) Remove pork chops from oven and top with caramelized onions. Serve with a delicious side salad.
