Coconut Curry Beef

2 pounds beef roast cut into 1 inch pieces
1 large onion, coarsely chopped
4 garlic cloves, minced
2 tbsp freshly chopped ginger
1 1/2 cups coconut milk
2 tbsp brown sugar
1 tbsp curry powder
1/2 tsp cayenne pepper
Salt and pepper
1) Heat your pressure cooker (pan part) and add just enough oil to lightly coat the bottom of the pan. Add the beef and brown. Add the garlic, onions, and ginger. Sauté until fragrant.
2) Pour in the coconut milk, brown sugar, curry powder, and cayenne pepper. Close the pressure cooker and cook for approximately 20 minutes under high pressure or until the meat is tender.
3) When the meat is tender, serve with rice and fresh tomatoes. Enjoy!
