Honey Walnut Shrimp

1 pound large shrimp, peeled and deveined
1 cup water
1/2 cup sugar
1/2 cup walnuts
4 egg whites
2/3 cup mochiko (rice flour)
1/4 cup mayonnaise
2 tbsp honey
1 tbsp sweet and condensed milk
vegetable oil for frying
1.) In a small saucepan, combine the water and sugar. Bring to a boil and add the walnuts. Boil the walnuts for approximately 2 minutes, drain and place walnuts on a baking sheet to dry out.
2.) In a large bowl, whip the egg whites to soft peaks. Fold the mochiko into the whipped egg whites until a paste is formed. Dip the shrimp into the batter and fry in preheated oil (350 degrees) for about 5 minutes or until golden.
3.) While the shrimp are frying, mix together the mayonnaise, honey and sweet and condensed milk. Remove the shrimp from the fryer, let drain for a minute and toss them in the mayonnaise mixture. Serve with rice and candied walnuts.
