12 ounces of whipping cream
7 ounces of dark chocolate
1 ounce icing sugar
1.) Cook the chocolate shattered in very little water, in a water bath. Stir constantly until the chocolate
has melted. Divide the egg yolks from the whites of the eggs. Add the egg yolks to chocolate, cooled, and add the icing sugar.
2.) Beat the egg whites separately, and incorporate chocolate only when they are well frothy. Mix all together, being careful to move the electric mixer from the bottom upwards.
3.) When finished whip the cream, always apart, and then add it to the other ingredients. Mix thoroughly until the mixture is smooth.
4.) Pour the cream into a pan and put in the freezer for a few hours. Before serving, thaw wait.
