Pie Dough Ingredients:
1 cup cold butter cut into pieces
3 cups flour
1 tsp salt
½ cup cold water (more or less)
1.) Place tall ingredients into the bowl of a food processor.
2.) Pulse ingredients to cut fat into the flour.
3.) Butter should be the size of small peas when ready.
4.) Dump butter and flour mixture into a large bowl and add water slowly mixing until butter and flour pulls together into a dough mass.
5.) Place pie dough into refrigerator until ready to use.
6 cups freshly sliced peaches
1 tbsp freshly squeezed lemon juice
1 cup sugar
½ cup flour
1 tbsp freshly grated nutmeg
1.) Place ingredients into a large bowl and toss to coat well.
2.) Place peach filling into a medium size cake pan (8 X 8) or a (9 X 13).
3.) Roll out pie dough to ¼ inch thick. Should be large enough to cover the top of your pan.
4.) Fold pie dough in half and place on top of cobbler. Unfold pie dough to cover cobbler. Cut any extra pie dough from around the pan.
5.) Brush with an egg wash and sprinkle with sugar and nutmeg.
6.) Bake in a 380 degree oven for approximately 45 minutes or until done.
