Homemade Chicken and Noodles

1 large whole chicken
3 large eggs
2 cups all-purpose flour
salt and pepper to taste
1.) Place the chicken in a large soup pot and cover with cold water.
2.) Bring to a boil over high heat and reduce to a simmer.
3.) Cook until the chicken is almost falling off the bone, about 2 hours.
4.) Remove the chicken to a plate and refrigerate until it is cool enough to peel the meat off of the bones. Reserve the cleaned meat.
5.) Skim the fat off of the broth and set aside.
6.) While the chicken is cooking, make the noodles by whisking the eggs and stirring the flour in until a soft dough forms. Make sure it's not sticky. Wrap and refrigerate the dough for 30 minutes.
7.) Roll the dough out paper thin on a floured surface. Roll into a cylinder and make 3/8” slices with a knife.
8.) Unroll the noodles and let dry out uncovered until dry, about 45 minutes. Bring the chicken broth to a boil and add the noodles. Cook until tender, about 10-15 minutes. Add the chicken meat and cook 3 more minutes.
9.) Serve over mashed potatoes.
