Pineapple Fried Rice

1 tablespoon sesame oil
1 tablespoon fresh ginger, minced
2 teaspoons minced garlic
1 tablespoon chili paste
1/2 pound large shrimp, peeled and deveined
1 teaspoon red Thai curry paste
2 cups brown rice, cooked and cooled
1 cup fresh pineapple, diced 1/2"
1/3 cup diced tomatoes
2 tablespoons tomato paste
1 tablespoon fish sauce
1 teaspoon white pepper
1/4 cup green onion, diced fine
3 tablespoons cilantro, chopped
1.) Heat oil in a wok or large skillet. Add garlic, ginger, and pineapple and cook until lightly browned.
2.) Add shrimp, curry and chile pastes, and fry 1 minute. Add remaining ingredients and fry, stirring constantly, about 4 minutes.
