Mediterranean Pocket Sandwich

2 tomatoes, sliced
1 cucumber, peeled and sliced
1/4 cup Italian style dressing
1 pound ground lamb
1 cup chopped onion
4 garlic cloves, diced
juice and zest from one lemon
2 tsp dried oregano
1 cup crumbled feta cheese
2 cups freshly chopped spinach
Salt and pepper to taste
1. In large bowl combine the sliced tomatoes, cucumbers, and Italian style dressing. Toss to coat the tomatoes and cucumbers. Set aside to marinate.
2. Heat a large saute pan and add just enough oil to to lightly coat the bottom of the saute pan. Add onions, garlic and the ground lamb, thoroughly cook the ground lamb. Salt and pepper to taste.
3. Transfer the lamb to a large bowl and toss with the lemon juice, lemon zest, oregano, feta cheese and chopped spinach.
4. Slice the pita bread in half and stuff each half with lamb filling, marinated cucumbers and tomatoes. Serve with your favorite chips and enjoy!
