Christmas Lamb and Klondike Potatoes

Boneless leg of lamb
1 tsp cumin
Zest of one lemon
1 tsp onion powder
1 tsp garlic powder
1 tsp dried thyme
6 Klondike rose potatoes, cut into 1 inch pieces
1 cup Italian season breadcrumbs
4 cups finely shredded green cabbage
1/4 cup rice vinegar
1/2 cup olive oil
Salt and pepper to taste
1.Combine the lemon zest, cumin, onion powder, garlic powder, and dried thyme.
2.Place the leg of lambing baking sheet and rub with spice rub.
3.Cover leg of lamb with foil and place in a 350 degree oven for approximately 2 hours. I personally like to pressure cook my lamb for about 30 minutes or until tender.
4.Boil the potato pieces until tender. Drain potatoes, drizzle with some olive oil and toss with bread crumbs. Place on a baking sheet and just before service, place potatoes under the broiler to brown the bread crumbs.
5.Place the finely shredded cabbage into a large bowl. In a small bowl whisk the vinegar, oil, salt and pepper to taste. Toss cabbage with vinaigrette just before service.
6.Serve lamb with the broiled potatoes and cabbage salad.
