Four Cheese Stuffed Top Sirloin

6 to 8 Beef Top Sirloin
1/2 cups blue cheese crumbles
1/2 cup provolone cheese diced
1 cup goat cheese
1/2 parmesan cheese
1/4 cup beef base
1/8 cup liquid smoke
3 Tbsp kosher salt
1/2 tsp black pepper
1 tsp lemon pepper
squeeze limes to taste
1.) Make a pocket in the Top sirloin fill in all the cheeses.
2.) Use a bamboo skewers to close the pocket as a " XXX"
3.) Seasoning the meat with salt, pepper, lemon pepper and fresh lime juice
4.) Before you put the sirloins in the oven, brush the top sirloin with liquid smoke and beef base.
5.) Cover the meat with aluminum foil and cook in the oven for about 45 min at 350 F.
