Greek Infused Salad with Pulled Pork

10 cups mixed greens (spinach, arugula, iceberg...)
2 cups sliced cucumber
1 small red onion, diced
1 cup feta cheese, crumbled
1 cup kalamata olives, pitted
1/2 pound cooked pulled pork (I do mine in the pressure cooker)
2 tomatoes, cut into wedges
1/2 cup balsamic vinegar
1/4 cup extra virgin olive oil
1 tbsp Italian seasoning
1 tbsp Dijon mustard
1 tbsp honey
Salt and pepper to taste
1.) Add the mixed greens, cucumber, diced onion, and kalamata olives to a large bowl.
2.) In a small bowl whisk together balsamic vinegar, extra virgin olive oil, Italian seasoning, Dijon mustard, and honey. Salt and pepper taste.
3.) Pour prepared dressing over salad greens and toss to coat.
4.) Place prepared greens on a plate and top with prepared pulled pork and sliced tomatoes.
5.) Serve and enjoy!
