1 bone in pork roast (6 – 7 pounds)
2 tbsp Extra Virgin Olive Oil
1 tbsp freshly ground pepper
1 tbsp kosher salt
4 cups barbecue sauce
Your favorite buns
1.) Place pork roast in a large roasting pan. Drizzle with olive oil and sprinkle with salt and pepper.
2.) Cover pan and place in a preheated 350 degree oven and “moist” roast for about 4 -5 hours or until the meat can be easily removed. Meat can also be cooked in a pressure cooker for about 1 hour. The size of the pork roast will determine the overall cooking time. Consult your pressure cooker owners manual for details.
3.) Shred the meat and either refrigerate or continue on to step 4.
4.) Pour barbecue sauce into a large pot and transfer meat into the sauce.
5.) Bring to a boil reduce heat heat and simmer for about 20 minutes.
6.) Serve with on your favorite bun and side dishes. Enjoy!
