4 chicken breasts
1 cup tomato sauce
1 cups spicy salsa
1 cup chicken stock
1 tsp cumin
1 tsp smoked paprika
1 cup diced tomatoes
1 cup shredded lettuce
1 cup plain greek yogurt or sour cream
salt and pepper to taste
whole wheat tortillas
1.) Add the chicken breasts, tomato sauce, spicy salsa, chicken stock, cumin, and smoked paprika to a pressure cooker. Bring to pressure according to manufacturers directions and pressure cook for 15 minutes.
2.) Depressurize your pressure cooker according to the manufacturers instructions and check the chicken breasts for doneness. They should shred easily if cooked long enough. Adjust cooking time as needed.
3.) To assemble the burritos, simply transfer some shredded chicken to the burrito and roll it up. Top with shredded lettuce, diced tomatoes and greek yogurt or sour cream.
4.) Serve with brown rice and black beans on the side. Enjoy!
