Spiced Lamb Chop

1tsp. Red pepper
C. Olive oil
Salt and Pepper to taste
8 4oz. loin cut lamb chop
6 sweet mini peppers cut in half
1tsp. minced garlic
1 C. mini Heirloom tomato
C. Red Wine
Preheat oven to 450 degrees. Mix the first 4 dry ingredients in a small mixing bowl with olive oil.
Toss the lamb chops in the marinade.
Preheat a saute pan over medium high heat.
Sear lamb on both sides for 3-4 minutes. Add the onions, peppers, and heirloom tomatoes.
Place on the top rack of the preheated oven and cook for 15-18 minutes or an internal temperature of 140-145 degrees.
Remove from oven.
