Cuban Meat Pie

Due to the length of the US Open this segment was cut short.
1/2 cup finely chopped onions
1/2 Green or Red Bell Pepper, finely chopped
3 cloves garlic, minced
1/2 pound ground beef
1/2 pound of Ground Pork
1 teaspoon salt
2 teaspoons cumin
1 teaspoon smoked paprika
4 teaspoons tomato paste
1/4 Cup sliced green olives
2 Tbsp Capers
1/4 Cup Golden Raisins, soaked in wine
1 Box of Puff Pastry
Saut the onions, garlic, and pepper until the slightly caramelized, ground beef and pork, salt and salt and cook until browned. Add the rest of the ingredients and cook until dry, making sure to season if needed. Drain off excess fat and let cool.
Heat up an oven to 400 degrees Fahrenheit. Roll open one of the puff sheets in a sheet pan lined with parchment paper, Place the cooked and cooled meat filling in the center and spread to 1/2 inch from the edges. Brush an egg wash all around the edges and cover with second sheet of puff pastry. Egg wash the top of the pie and sprinkle with granulated sugar.
Bake for 20 to 25 minutes or until golden.
Remove from oven serve warm.
