Sage-Infused Pork Chops with Caramelized Onions and Tomatoes

4 pork chops, bone in
1/4 cup flour
1 tbsp dried sage
1 large red onion sliced into rings
juice and zest from one lemon
2 tsp sugar
4 medium to large tomatoes quartered
salt and pepper to taste
1.) Mix to flour, dried sage, salt and pepper in a large plastic bag and shake the ingredients together to mix.
2.) Heat a large sauté pan on the stove and add just enough olive oil to lightly coat the bottom of the pan.
3.) Place the pork chops in the flour bag and shake to coat them with the flour and sage mixture.
4.) Add the pork chops to the hot sauté pan and cook them for approximately 6-7 minutes on each side or until cooked through.
5.) Remove the chops from the pan and set aside.
6.) Toss the onions with the lemon juice, zest and sugar. Add them to the hot sauté pan and cook for 2-3 minutes or until they begin to caramelize. Add the tomatoes and and warm them through.
7.) Serve the sautéed onions and tomatoes with the pork chops along with a green salad. Enjoy!
