Galinhada (Brazilian Chicken and Rice)

1 whole chicken cut up
2 cups rice
4 cups chicken stock
1 cup diced carrots
1 medium onion diced
3 garlic cloves minced
2 tbsp olive oil
1.Combine oil, garlic, onion, carrots and chicken pieces.
2.Saut until chicken is cooked through.
3.Add rice and cook until the rice is a white translucent color (about 5 minutes)
4.Add boiling chicken stock and allow to cook until rice and chicken are cooked.
