Matzso Spinach Pie

2 Bunches Spinach (approx. 2 cups, wash, dried & chopped)
1 Egg, Beaten
3 c. Mashed Potatoes
1 1/2 c. Grated Romano Cheese
4 T. Olive Oil
Wash spinach, drain, spread out on a paper towel and allow to dry. Cut into fine pieces and lightly toss with salt. Mix together 1 beaten egg, 1- 1/2 cups mashed potatoes and 1 cup grated cheese. Mix with spinach and set aside.
Soak matzos in a pan of warm water for about 2 minutes. Lay out on cloth and sprinkle with additional water, cover and let stand for 15 minutes.
Grease a 9 x 13 baking pan and coat with 2 tablespoons oil. Heat in a preheated 350 degree oven. Line hot pan with matzos, lining the entire bottom and up the sides. Spread spinach filling evenly over the matzos. Cover with remaining matzos. Mix 2 beaten egg with the remaining potatoes, cheese and the last 2 tablespoons of oil. Spread on top of matzos.
Bake 2 hours or until top layer is golden brown. Served with a tossed green salad.
